Ingredients:
1 lb asparagus tips
2 tablespoons olive oil
salt and fresh ground pepper
2 hard-boiled eggs, roughly chopped
Directions:
- Preheat the oven to 400F.
- Wash and dry the asparagus
- Toss with olive oil, spread on a baking sheet on a single layer, sprinkle with salt and pepper.
- Bake for 15 minutes, turn once while baking.
- Sprinkle the chopped eggs on top and serve.

ReplyDeletewas glad to see this recipe. i have been making it for years, but with a twist. i add lemon juice to the olive oil, make a vinaigrette, toss the steamed or grilled asparagus and then top with the chopped egg. a variation of a hollandaise sauce that looks prettier. can't wait to try your version.
