Israeli Couscous with Asparagus and Pine Nuts


Ingredients:

1 shallot, finely diced
2 tablespoons of butter
Israeli couscous (I used the one from Trader Joe's, 1 box is about 1 1/3 cup)
1 3/4 cup of hot water (or chicken broth)
1 teaspoon salt
1 bunch of asparagus, cut into 1-2" strips
1/4 cup of toasted pine nuts
1 tablespoon of chopped parsley

Directions:
  • In a medium sized pan over a medium heat, melt the butter and sauté the diced shallot until brown (5 minutes)
  • Add the couscous into the pan and brown for 5 minutes
  • Add in the hot water (or broth) and salt into the pan and bring back to boil
  • Lower the heat, cover and simmer for 5 minutes
  • Add in the cut asparagus into the couscous, cover again and cook for another 5-6 minutes until the asparagus is done and couscous is cooked
  • Turn off the heat and stir-in the toasted pine nuts and chopped parsley
  • Serve as a main dish or a side dish

  1. Thanks for posting this. I made it tonight - it was so yummy! I didn't have chicken broth, so I used a mixture of white wine and water. I also added some lemon zest and lemon juice at the end when I was tossing it. It paired perfectly with salmon.
