Ingredients:
3 ears of corn, prepped and husked
1 big bowl of spinach
1-2 shallots, minced
1 tablespoon salt
1 tablespoon sugar
Directions:
- Cut corn into 2-3" sections
- In a large pot over medium heat (with enough water to cover the corn sections plus 1-2 inches), boil corn sections for 30 minutes
- Add in minced shallots and spinach
- Adjust seasoning accordingly
- Serve at room temperature
